How To Make Sweet & Sour Pork Stir Fry In Under 15 Minutes

Eating out every night is a culinary adventure I love to experience but…. there are days and nights when all I want to do is stay home, cuddle up on the couch and watch some TV or read a book. I could order some Take Out but on this night I’m actually in the mood to cook. Nothing fancy I just feel like a healthy meal with lots of vegetables, light on the fat and heavy on the flavour. It just so happens that my friends at Blue Dragon sent me a care package a couple of weeks ago with a few of their products for me to try and tonight is the night I’m gonna try them. Tonight’s feast will be Sweet & Sour Pork Stir-Fry.

Number one rule for me of cooking at home is to first make sure I have all the ingredients. For this Sweet & Sour Pork Stir Fry I need

  • Pork
  • Vegetables
  • Blue Dragon Sweet & Sour Sauce packet
  • Blue Dragon Rice Noodles

Check I have all the ingredients I need. For the vegetables I am using what’s already in my fridge which is a red pepper, snow peas, green onions and mushrooms.

Next step is to clean and prep the vegetables and to cut up the pork into bite sized pieces. Once that is done all that is left for me to do is cook dinner. Before I start the stir fry though I boil some water and pour it over the Blue Dragon rice noodles. I allow them to soak for 3 minutes and then I drain them and cover with cold water. Unlike pasta rice noodles can be cooked ahead and will not get sticky if left in a bowl together. Ok now onto cooking.

Step 1 Pork strips go into my frying pan at medium to high heat. I have a cast iron skillet I love and because it is already well seasoned I find it adds a nice touch of flavour to everything I cook in it.

Step 2 Once all the Pork has been browned I add all the chopped vegetables. I give it a good stir and let it sit for a couple of minutes. In the meantime I drain the cold water from the rice noodles and scoop out a portion to my dinner bowl.

Step 3 Once the vegetables have cooked for a couple of minutes I add the Blue Dragon Sweet & Sour Sauce packet to the mix and stir until everything is coated. I let it sit for another minute and then it’s time to serve up some of the stir fry over the rice noodles.

Now all that is left for me to do is pour myself a glass of wine, in this case it is the Haywire Lunar Red Wine, turn on the Food Network, and get ready to eat. From start to finish including prep time this took me all of about 15 minutes. Add 10 minutes to clean up the kitchen afterwards and this is one quick and easy meal.
